New Vegan Recipes from Students and African Catfish Dishes in the University Canteens

Dear diners,
we are pleased to introduce new vegan recipes to our menus that were created based on suggestions from students of individual faculties. You can easily recognize these dishes in the menu – their names include the note “recipe from a student” together with the faculty the recipe comes from.

You can look forward to the following dishes, for example:

  • 250 g Indian red lentil dhal with coconut milk, 200 g steamed basmati rice (BL) (vegan) (vgtr.) (FSS student recipe)
  • 250 g Saffron risotto with zucchini (BL) (vegan) (vgtr.) ( LF student recipe)
  • 350 g Chickpea curry goulash with roasted vegetables, 200 g steamed jasmine rice (BL) (vegan) (vgtr.) (LF student recipe)

At the same time, we have newly included dishes made from African catfish (Clarias gariepinus) in our menus. This fish is supplied by a regional producer and is appreciated for its mild flavor, minimal bones, and high content of quality protein. African catfish is naturally rich in omega-3 fatty acids, B-group vitamins, and essential minerals.
Another advantage is its local production. Short transport distances and controlled farming conditions contribute to the freshness of the product and help reduce environmental impact. By introducing this fish to our menus, we aim not only to diversify the range of dishes offered but also to support regional producers and sustainable food sources.

We believe these new meals will enrich the canteen menu and provide inspiration for your next lunch choice.
